Ingredients
60g butter/fat
240ml milk
1 large egg
150g yellow cornmeal
150g all-purpose flour
50g granulated sugar
1 tablespoon baking powder
1 can blitzed corn
½ teaspoon salt

Cornbread is a quick bread made from cornmeal, often associated with Southern U.S. cuisine, used as a carb sub.

Heat the oven to 200° C
Heat the butter over low heat until melted
Beat the melted butter, milk and egg with a fork or wire whisk until well mixed
Add other ingredients and mix well
Batter will be lumpy
Spread batter evenly in baking pan and smooth top
Bake 20 minutes until golden brown and a fork in the centre comes out clean
Cool down again for at least 4 hours
Add chopped bacon or/and chopped green chillies
